I was recently diagnosed with celiac after bloodwork and biopsy. I work for a large healthcare company that has a cafeteria. I met with one of the dietitians who is celiac herself for a tour of what I could have at the cafe. The line servers switch gloves and pull out the dedicated cutting board, etc. So far so good. I felt like a turkey sandwich. They pulled a loaf of Udis out to get my slices. Put it together, sliced, and wrapped. I walked back to my office, opened it up, and groaned. Picked off all the bead and ate it with a knife and fork. It was tasty, but no more bread there for me. My dad became celiac late in life too and loved Udi, but he toasted it. They don’t have a dedicated GF toaster. I could bring my own bread, I guess. Any recs for decent GF bread or rolls that don’t require toasting?

Rant Why do they do this

I'm at a group camp where everyone is having dinner together. Someone asked me if I was going to eat so I explained that I have celiac. He then proceeded to name things I could eat, including flour tortillas (they're eating burritos). WHY do they do this?? I think I know what I can eat better than you, buddy.

Don't you just love going to the grocery store and seeing portions be the same size but prices being higher? Cause I know I also love seeing prices being the same but the portions being smaller. Gluten free Oreos being the same price as their normal counterparts except the package is noticeably smaller? So amazing!

Question Is it ever okay to eat gluten? Recently diagnosed (late 20s) and really struggling to accept what my life will be like soon

Hi all. I was recently diagnosed with celiac after my blood test and genetic results, I’m now currently a few weeks from my endoscopy and really grieving the fact that I can’t have gluten again after it. I practically eat gluten every meal, and am really grieving how my life will be changing soon. I’ve had gluten free alternatives before (my dad and other relatives are celiac), and it has never tasted good to me. What I’m really grieving is how this will affect my social life after this. I love going out to eat. I love going to breweries with friends and having a good beer. I really am struggling to grasp being 100% gluten free. I’m struggling to accept that many restaurants will not be safe for me. And that my life after this is constant vigilance for what I can consume. I’m crying just typing this up again. I know for my health I need to stay consistent but is it okay if I have it occasionally?😭 mild stomach symptoms would make it worth it to me for the occasional food I miss or the social aspect.

For those who have active social lives, how do you deal? I love going out to food and drinks with friends. I love trying new foods and new places. I’m in denial of what my future is to look like soon😭😭 it all feels so unfair

Product Help me feel I can eat this! Jersey Mikes - is this the GF bread?

I’m having the most frustrating experience. I’m stuck at a car dealership for the day and ordered this sandwich from JM on door dash. I called when I ordered and confirmed they saw the GF tag. My bag has GF on the receipt from my order but it’s not written on the bag. I called to confirm I got GF and they are busy and have made a bunch of GF and can’t confirm one was mine. They looked up my ticket and confirmed it said GF which I know. Does this look like their GF???

Rant Apparently wheat allergy = celiac

Got told this by my doctor today. My test results were negative but due to the severity of the symptoms, I got an endoscopy scheduled and the doctor told me I need to eat even more gluten until then (even though I think what I've been eating was enough) and we'd redo the tests one week before the endoscopy. I asked if I'm getting tested for wheat allergy at the same time because oh God I can't wait to stop eating gluten as soon as I'm done already, he told me Celiac IS wheat allergy. When I insisted they are different he asked me to explain the difference. I said celiac is when the damage happens when gluten gets ingested but with the wheat allergy I can get a reaction even from simply touching wheat. He told me I shouldn't be touching wheat anyway because of cross contamination.

I thought this was strange and he's just incompetent, but turns out, in my country, Saudi Arabia, celiac IS translated to wheat allergy in Arabic and there's no distinction between them!!!!!! So the issue isn't even with the doctor himself but the whole medical system. this is from the official ministry of health website. But it's even clearer in the Arabic page!

Rant Stupid Store Corporations

I was soooo happy to see new products and more variety in brands in stores like Walmart and Publix. A couple months ago our closest Publix changed its freezer section and eliminated all but 1 gluten free pizza brand. Recently (in the last week or two) our local Walmart has redone its freezer section and now I can only find 2 brands of gluten free pizza with 2 flavors each. AND they’re downsizing the frozen gluten free section: half of the potsticker type products, the garlic toasts, frozen snack type things like mozzarella sticks, etc. are gone now. I’m not the celiac in the relationship, but we’ve made our apartment 100% gluten free. It makes me so frustrated to see all these new options being taken away after only a couple months, and even more frustrated that it affects the person I love.

Question (What I want) Something for Everyone; A Food Allergy Guide for Caterers and Restauranteurs

Gah, my day! You’ve been there, a day of speakers and lunch. Was told there would be a gluten-free meal for me. Got there and I was told I could unroll the wraps and eat the contents 🤦‍♂️🤦🏻‍♀️🤦. FML.

We all have experienced this. The years go by and you stop trusting it when people say they’ll provide something you can eat. Usually, I pack a meal, but sometimes I just don’t have time. I’m so frustrated.

So when I was invited to a lecture by a visiting artist at my local Art center and was told multiple times there’d be a meal for me. I was sloppy and didn’t pack a meal. So I had nothing. And these people are really nice and they mean well, but they just don’t get it and I don’t wanna make a scene, I don’t want to be difficult, but God I wish there was a book I could get them. There ought to be a book for all of these caterers and the people who organize events that outlines this stuff so they understand about cross-contamination and that the flour from Italy isn’t any better, etc., etc..

There outta be a book, and it should have stuff about celiac and diabetes and alpha gal syndrome, and allergies. It should be readable, and funny even, and explain the realities of what life is like for people and the potential side effects and down the road stuff and what a pain in the butt it is and how exhausting and miserable for people who have to live with this all the time. But yes, written very cleverly so that it’s both funny and informative.

It should be a book about the dietary limitations and cross-contamination and what foods people can’t eat. It may be a little bit about substitutes. But not a page about cures or treatments or how to get rid of these things be legit science or quack pseudo doctors you tell you to stand out under the full moon and beat your naked ass with Willow leaves or any of that stuff. There’s plenty of room for books like that, but this needs to be just about people who are not home who are at a restaurant on vacation or traveling at a conference and they just have to goddamn eat something.

Caterers and restaurant tours are so often annoyed by this, by these people who dare to have dietary difficulties. But people, if this is your profession at the very basis of it is hospitality and taking care of people. I remember reading books about Greek mythology from the children’s section of the library when I was a wee tot. Back in the day, hospitality to the traveler was sacred. Taking care of people who were not home defined a civilized culture. Are we not civilized? Does this basic core compassion not matter?

Please tell me there’s a book like this out there. Something that will clearly and mindfully explain to the mothers at the preschool. Why packing peanut butter sandwiches could endanger another child. It will explain about the long-term effects of celiac. And will clarify how dangerous alpha gal syndrome is. Something snappy and tight with interviews from experts and annecdotes from allergy sufferers and also from restauranteurs. Clear explanations. Readable lists and charts. Something people could use!

A guy’s gotta eat. A gal‘s gotta eat. Kids have to eat. We are not trying to be difficult, we’re just being human and we need food.

I would love to go out and find a book like this and I could gift it to the arts center. We need this book. Tell me this book exists. If not, somebody write it. A book like this would be a goddamn best seller! I’d buy copies by the case and give it out everywhere!Please!

Rant I wish more health providers treated celiac disease as a whole body disorder rather than a GI disorder.

So I’m in the process of trying to get diagnosed with celiac after I had a health decline in 2024. My symptoms were fatigue, bloating, weakness, joint pain, migraines, diarrhea, yellow poop with a lot of undigested food, rapid gastric emptying, swollen lymph nodes, constant UTI’s, BV, kidney infections, peeing blood, autoimmune POTS, dysmenorrhea, extremely painful periods, rashes on my arms and behind my legs, etc etc. Ever since then I chalked it up to celiac with research (I didn’t have health insurance) and I’ve been strictly gluten free for 2 years since then. After the first 2 months of being gluten free I felt so much better. Accidental gluten exposure just led to my symptoms returning. Now I’m trying to get diagnosed with celiac so I’ve been doing the gluten challenge. Currently it’s been 7 weeks. After 3.5 weeks my primary wanted to check in on how I was doing and I had blood work done to check my progress. So they checked my vitamin and iron levels, and I wasn’t deficient in anything. I just simply thought “well it’s only been 3.5 weeks, I don’t think that’s nearly enough intestinal damage for me to be deficient.” Then IgA-tTg test came out at <1. It wasn’t even mildly elevated even at 3.5 weeks so I got sent to GI.

At GI I explained everything. My symptoms, and then I pointed out with the other bodily symptoms I had. To then she said “Kidney pain? Peeing blood? I don’t think that has anything to do with celiac. I don’t even think you have it. Maybe just NCGS, but I’ll schedule a endoscopy/colonoscopy anyways.” She still ran a bunch of lab tests and gave me the whole celiac panel. (Awaiting results rn)

While I know I’m not diagnosed, I still feel kinda weird because I feel like all the symptoms I’ve experienced have been basically chalked down to “not celiac” because it’s not strictly GI symptoms. Even though there is a correlation between IgA nephropathy and celiac disease.

She said she’ll take a look regardless to figure out what’s wrong, even then all these tests may not lead to an answer. I just wish that celiac disease wasn’t treated as “only GI manifestations” because it’s tough for those with atypical presentations of celiac disease.

Question Tips for Traveling - Recently Diagnosed

I was very recently diagnosed with celiac and had a trip to Europe planned for a friend’s wedding. We’ll be in Sicily and then going to the French Alps after.

Any tips/recommendations especially for those areas?

I have the find me gluten free app downloaded so I have a better idea of places I can eat. I’m planning to bring tons of protein bars/snacks.

I’ve also been looking at the PDF allergy cards - wondering if they are worth it.

Rant First GF vacation

For context, I’m still in my first month of trying to go gluten free. I just went on my first vacation since realizing I have a gluten problem. I couldn’t help but get sad at restaurants when I’d watch my friends be able to eat the local delicacies and I either had to get something else or have a much worse version of what they had.

But the thing that really made me upset is that I would have to pay several dollars more for the GF version, but bc of the nature of the small bread/bun, I’d get like half as much ingredients. I couldn’t help but feel extremely sour about it when we would order the same sandwich/lobster roll and I’d pay more and get half.

I don’t know the point of this post. I guess I’m just feeling pretty melodramatic about the whole thing. It feels like I’m in the anger stage of grieving my favorite foods and how much easier going out and traveling used to feel. I know with time I’ll get used to all the extra executive functioning required to make it work and I’ll forget what the gluten version of things taste like but for now I’m just left disappointed at the subpar and expensive GF version.

If there’s anything that helped you get over the anger/disappointment hump of this whole process, please let me know. I’d appreciate it.

Question How long did your iron levels take to recover after going gluten-free?

I was recently diagnosed with asymptomatic celiac in March after initially showing severe iron-deficiency anemia in my routine bloodwork in September 2025. Upper endoscopy showed no villi damage but increased lymphocyte infiltration, and bloodwork showed elevated transglutaminase IgG/IgA, increased gliadin IgA.

I’ve been gluten-free now for around 3 months and just got routine bloodwork that continued showing severe anemia. Papers I’ve read have said that it can take anywhere from 6 months to 2 years for iron levels to regulate, so I’m curious how long it’s taken some of you, anecdotally, to see regular iron levels if you were anemic prior to diagnosis. I realize 3 months GF isn’t a long time and it’ll take much longer for mine to regulate, I’m just curious. Thank you!

Rant alcohol intolerance???

mostly a question but marked as rant because i start venting lol - I feel like this has already been talked about before but felt like opening this convo back up. does anyone else have alcohol intolerance that they believe may be tied to celiac disease? many years ago before I went gluten free, I could have a few drinks and be fine. but now that I've been gluten free for a while, after a few drinks I am SICK. like "I need to lay on the bathroom floor and do breathing exercises" sick lol. even if the alcohol I'm drinking is gluten free (as far as I am aware...) I'm not really the party type anyways but I'm in my early 20s and kinda wanna experience it from time to time anyways, but I am filled with anxiety when going out due to having to Google "is *alcohol* gluten free", take the risk anyways, potential cross contamination, and the fact that even if it is 100% gluten free I could get insanely sick anyways. And eating is good to help you process alcohol but bar food is never gluten free, i have to think about eating before going out, etc. I'm tired of not being able to be impulsive and have fun like other people. my inability to eat out is something that i dont usually let bother me but lately its been really impacting me and the way i am able to have fun with friends and stuff.

Discussion Are we stilm eating the soft serve from Costco and frozen yogurt from Sam's Club? Looking for experiences and opinions?

Please don't come at me- I am newly diagnosed (2 weeks ago).

As far as I can reasonably tell, the only gluten risk would realistically be the outside of the cup they put the ice cream in, since the worker handles it after presumably handling gluten food? As long as you are not licking the outside of the cup, does that mean it is safe to eat the ice cream?

Keep in mind also: there are no cones at either establishment so there isn't a risk of them putting ice cream back into the machine after it has been inside a cone.

Again, please be kind to me. I'm a new celiac trying to learn as much as I can.
