Same sound different letters??

Hii, I’m very new to learning Greek (started this week) but I’m struggling with the difference between ε, υ, ι, η, ει, οι cause they (according to my book) all sound like /ee/
Same for ο, ω as they both sound like /o/
And γγ, γκ which both sounds like /ng/

When do you use which one?? Like is there some kind of rule here?? Do you just pick a favorite and stick with that…??? How does this work?😅
