Hi, had a go these simple little beauties, a treat

A staple! Walmart has this fantastic "Tuscan bread" with a toothy firmess from fine durum semolina that is the perfect support for an egg. I highly recommend the bread!

Had leftover chips and salsa from dinner. Impromptu Chilaquiles and just used what I had in the fridge. Didn't have enough salsa so they are a bit drier than usual. Didn't have cilantro, avocado, or cojita. Used red onion and scallions to substitute. Had lime juice and crema, and cholula and a cilantro tomatillo based hot sauce.

Soft scrambled egg, smoked Carnitas, small diced potatoes, avocado and scallion on corn tortillas. Chipotle hot sauce.

One of my favourite meals is a potato veggie hash with eggs on top. Usually I'd make fried eggs but I've finally figured out a foolproof way to make poached eggs and I loooove them so much.

My fav breakfast!

This might not be the most aesthetically pleasing thing but I wanted a whole red onion for breakfast today so I cooked some down in S&P and a drizzle of olive oil and then when I was happy with the softness I put a serving of cottage cheese on top of the onions and covered it until the cheese was melty, then I made 2 little wells and cracked in 2 eggs and cooked until set and had it with toast. I love the taste of red onion. But some chili crisp would go very well on this, I think.

Five fried eggs over medium with mozzarella and fiesta. Blend cheese and spaghetti sauce on top. Delicious!

How you like yo eggs? Fried or fertilized?

I eat a lot of eggs. Çilbir has been a hyper fixation lately.

Çilbir is a dish from Turkey where poached eggs sit on a bed of garlic, mint and dill yogurt and are then topped with smoked paprika butter :)

Sunny side up eggs, baked pepper bacon, pancakes.
