Recipe: Stewed meat in sauce with vegetables, grains, rice, fried plantain, cheese and a fried egg

This was last night's dinner — Coastal Pepper-Mint Chicken Sukka. Seared chicken thighs sautéed in roughly ground coriander seeds, fennel seeds, and pepper corns. Creamy coconut milk binds it all together! Absolutely delicious!

First time making

Italian sausage, peppers, onion, and minced garlic

I had more than what’s pictured lol but this is my go to meal when I’m in training. I’m not a nutritionist but it makes my body feel good!

I wanted to switch things up a bit for dinner, so I tried making seared salmon with tofu miso soup, rice, and a few simple sides. It turned out better than I expected and felt satisfying without being too heavy.

Tomrrow my inlaws-to-be from Croatia arrive and we will have a packed schedule, so I made the best of todays evening and treated myself with a steak dinner (tenderloin & ribeye).

Use: papa, cebolla, zanahoria, morrón, pollo, arvejas y puré de tomates

A coastal kerala specialty

Pizza isn’t usually a big deal, but; it came from the farm. The crust is homemade. The sauce came from tomatoes, basil ,oregano and onions we grew in the garden. It has rabbit sausage from rabbits we raised and sausage we prepared ourselves. The mozzarella is fresh made yesterday from milk from our goats and the mushrooms are chanterelles foraged from our property.
