(Especially at 4:15 am when they’re knocking things over and doing a road rally to be fed.. it’s hard but I don’t take the bait).

Means they are in hunting mode. So that means they want you to play with them since there is no prey for them to hunt. Their pupils get big to let more light in so they can more easily see/hunt prey.

When they're wide like that, it is time to play. So play must be had, even if it's just throwing a crumpled paper ball.
That looks like an immensely loved cat, regardless, and I hope that when it was safe to do so, this kitty got all the snuggles.

Are you asking about her eyes in particular or the size of her pupils? Cats pupils dilate very fast when they are playing, fighting or scared.

Most likely blind with (PRA) progressive retinal atrophy or a cat from another country where they’ve been bred for years to have this look.
See my post from a few years ago on my late blind cat who had the same eyes since she was young.

When this happened to my cat, it turned out she was experiencing hypertension and during this time wasn't able to see but wasn't considered blind either

Do her eyes return to normal at any point? If not, it may be that your kitty is going blind. In which case a vet check is needed. I worked in a cat rescue with a few blind cats, some of them had diabetes ( I think) which led to the blindness. This is something that treatable
