Roulade with ham and cheese
An interesting combination of phyllo dough and pizza toppings; I would personally add mushrooms, but my family doesn't like them, so this time I’m sticking to the classics. Of course, you can add whatever ingredients you prefer—this is just a basic recipe—so enjoy the flavors. You can find the method and recipe in the video in the comments.

Mini BLT Appetizers
10 grape tomatoes
2 whole leaves of romaine lettuce
4 slices of thick sliced bacon
1/2 teaspoon of garlic powder
½ cup of mayonnaise
5 slices of brioche loaf
1 tablespoon of melted butter
Slice tomatoes longways and store in the fridge until you are ready to assemble.
Cook bacon. Try to keep as flat as possible.
After bacon is cooked and cooled, slice into 1 ½ to 2 inch pieces.
Combine garlic powder and mayonnaise. Next, cut the romaine into 2 inch by 2 inch pieces. Set both in the fridge until you are ready to assemble.
Cut the crusts off of the slices of brioche loaf. Slice the pieces into quarters. Refer to the video if needed.
Brush the quartered pieces with the melted butter and bake for 5-6 minutes at 375 degrees F or until golden brown. After baking, set aside to cool.
To assemble, spread about a ½ teaspoon to a teaspoon of garlic mayonnaise on a piece of toasted brioche. Next place a piece of bacon, lettuce and tomato then repeat until done.

Finally nailed the perfect golden color on this Kunafa! 😋
Made this tonight and the house smells amazing. The contrast between the crunchy top and the warm cheese inside is just perfect. Added some pistachios and rose petals for that extra touch. Happy to share how I made it if anyone wants!

Garden to table Fried Zucchini sticks and Citrus Ranch
First time growing zucchini. Apparently they are very prolific plants, outside of taking them around the new neighborhood and throwing them in any open car window I see, I decided to make some fried zucchini sticks.
Zucchini
Breading - panko bread crumbs, with salt, pepper, garlic powder, onion powder, smoked paprika, chopped fresh herbs (rosemary, basil, oregano, and thyme)
Flour dredge: same spices as above except no herbs
Egg batter - two eggs, mixed with fork
Citrus Ranch: Mayo, milk, lemon juice, (let sit for a few minutes so the milk starts to become more like butter milk, but don’t let it curdle, there is a fine line between buttermilk and curdled sour milk), 1/2 hidden valley ranch packet, Cajun seasonings, smoked paprika, pickle juice, and citric acid
Cut your zucchini into spears, toss them in flour, then the egg wash, then into the plank bread mix (can be made ahead of time and placed in the fridge until ready to fry). Fried in vegetable oil at 375F until golden brown.
Soon as it came out of the fryer, sprinkled finishing salt over it. Plated, added a squeeze of lemon juice, and grated parm. Served with chilled citrus ranch.
