The main combo:
*Cheese tortellini
*Rosatella pasta sauce
*Bag of baby spinach
*Lightly smoked mussels
Optional:
*Parmesan cheese
*Chili Onion Crunch
*Chipotle Cholula
*Minced garlic
*Dried dill
- Bring a pot of salted water to a boil, add half a package of the cheese tortellini, and cook pasta as instructed.
- Set the cooked pasta aside in a bowl and keep a couple tablespoons of pasta water in the pot.
- Lower the stove temp to medium, roughly chop a good handful of spinach (a quarter of a third of the bag) and add to the pot.
- Drain the can of mussels and add the meat to the pot (optional: along with minced garlic and dill).
- Cook for a minute or so until the spinach wilts and everything is warmed up.
- Add 2 to 4 spoons of the pasta sauce depending on how saucy you want it (optional: along with some of the hot sauce and chili crunch for a spicy kick) as well as the pasta and mix it all up.
- Let the sauce and all ingredients cook on medium low heat for a little bit so the flavors meld while the sauce cooks down a bit (optional: grate as much parmesan cheese as you want and mix at the end).
- Add to a bowl and you're done.
